Baked Stuffed Mushrooms, Japanese style (Shiitake, Nori and Japanese yam)

【Ingredients】…for 2 people
4 Shiitake Mushrooms
2 tsp. mix starch
1/2 tsp. sesame oil
Some golden sesame
【 A(seasoning)】
8/8cut (1 sheet) Sea Salted Nori
70g Japanese Yam
1/4 tsp. salt
  1. Cut out stems of Shiitake Mushrooms and cut a cross in the heads. Then dredge mix starch on the inside of the heads.
  2. Mix 【Ingredients A】and stuff it up into the back of Shiitake Mushrooms.
  3. Put sesame oil and golden sesame on #2) and bake for 10 minutes in an oven toaster.
note
You can use white sesame instead of golden sesame.

【Ingredients】…for 2 people
8/10cut (1.25 sheets) Oyster Flavored Nori
150g Shirataki (noodle made from Konnyaku)
1 portion of seasoned cod roe
【Ingredients A(seasoning) 】
1 tbsp. of Sesame oil
1 tsp. of Soy source
  1. Drain excess water from Shirataki.
  2. With a spoon, peel off the eggs from the skin of the cod roe.
  3. Stir-fry Shirataki with sesame oil in a pan.
  4. Add cod roe eggs and stir-fry until they turn white.
  5. Remove from heat and mix with shredded Nori
note
Thinly shredded Nori are better.

【Ingredients】…for 2 people
16/8cut (2 sheets) Oyster Flavored Nori
180g Lotus root
Some vegetable oil
【Ingredients A(seasoning) 】
1 tbsp. mix starch
1/2 tbsp. mayonnaise
2 tsp. beet sugar
1/4 tsp. of salt
  1. Peel the skin of lotus root. Grate 2/3 of them and chop the rest coarsely.
  2. Mix with 1) and 【Ingredients A】
  3. Roll Nori over and deep-fry in vegetable oil at 170℃.
  4. Sprinkle with salt.
note
Water will come out of the lotus roots but you can roll the Nori over nevertheless.

Udon Noodle in Consommé soup for nori lover

【Ingredients】…for 2 people
1 sheet Oyster Flavored Nori, torn into smaller pieces
80g Udon Noodle (dry)
1 cube Consommé Soup Stock Cube or Beef Soup Stock for 300cc water
300cc Water
10g Onion
50g Thinly Sliced Beef
1 tsp. Soya Sauce
  1. Cook udon noodles according to the pack instruction.
  2. Meanwhile julienne onion and place into a pan with 300c water. Bring it to a boil.
  3. Add beef slices into 2 and when the color changes remove from the water. Set aside.
  4. Once udon noodle is cooked, rinse with cold water to remove sliminess then drain well. Fill a bowl with udon noodle.
  5. Dissolve soup stock in the pan (3), add nori and adjust the flavor with soya sauce.
  6. In a bowl (4), place 3 on top of the noodles and pour 5.
  7. Serve while it is hot. You can add pepper for an additional flavor.

Konnyaku Dice Steak with oyster nori

【Ingredients】…for 2 people
8 sheets Oyster Flavored Nori
1 block (250g) Konnyaku (jelly like Japanese food made from konnyaku potato)
1 tbsp. Butter
1 tsp. Soya Sauce
Oil for deep fry
  1. Chop nori into 3mm width.
  2. Wash konnnyaku, score the surface as much as possible then cut the konnyaku block into cubes. Drain and dry the surface with kitchen paper.
  3. Deep fry 2 with 160 degree of oil. Remove them when bubbles appear on the surface and drain the excess oil.
  4. Sauté 3 with butter in a frying pan and fill them in a plate, then sprinkle nori.
  5. Add soya sauce into the frying pan (4) and bring to a boil then pour over 4. Serve.

【Ingredients】…for 1 people
2 sheets Nori Flavored with marinated roe of Pollock
30g Grated Cheese for pizza
Soya Sauce to taste
Pancake ingredients
100g Yam Potato
100g Plain Flour
200cc Chicken Bouillon Soup
1 Egg, beaten
  1. Peel the skin and grate yam potato.
  2. Combine 1, egg and soup in a bowl.
  3. Add plain flour to 2 gradually and mix well.
  4. In a well heated frying pan, cook 4 tablespoons of 3 over the medium heat.
  5. When the surface is dry, turn and cooks the other side.
  6. Brush soya sauce on the surface and place cheese on top.
  7. When cheese is melted (it would take about 1 to 2 minutes), remove from the heat and serve topped with nori strips.

Lotus Root, Nori & Cheese Gratin

【Ingredients】…for 1 people
2 sheets Nori Flavored with Moshio Salt*, torn into smaller piece
200g Lotus Root
Milk enough to cover lotus root in a pan
80cc Single Cream
40g Grated Cheese for pizza
1 tsp. Salt
Pepper to taste
  1. Peel lotus root skin and chop it into chunks.
  2. Boil lotus root, salt and pepper with milk in a pan over the low heat until lotus root is cooked. Drain.
  3. Scrub the surface of gratin dish with chopped side of garlic clove then spread the butter.
  4. Place 2 in the gratin dish, sprinkle nori then pour cream over.
  5. Place grated cheese on top and bake in a pre-heated oven with 230 degree. When cheese get nice brown surface, serve.

4 sheet Salad Flavored Nori, torn into smaller pieces
100g Soba Noodles (dry)
1 Egg
1 tbsp. Olive Oil
6g Chicken Bouillon Soup Stock Powder
2 tsp. Balsamic Vinegar
  1. Boil egg hard then chop finely.
  2. Cook soba noodles according to the pack instruction. Once cooked, rinse with cold water then drain.
  3. Place 2 in a bowl and combine with olive oil, soup stock powder and balsamic vinegar. Mix well.
  4. Serve 3 in a plate topped with nori and egg.
